Sometimes, a girl’s just gotta have her pizza, and these no crust pizza bites answer all my low carb snacks craving!
Because this low carb pizza crust is literally just crunchy cheese, topped with pepperoni and dipped in sauce.
Like pizza nachos, and one of those low carb recipes that’s impossible not to love.
Plus, this healthy recipes ready for snacking in less than 15 minutes. No crust pizza bites have got protein, they’re portable and I just can’t get enough!
So, let’s get to baking…
I literally can’t think of 1 thing I don’t LOVE about these bites. But, if I had to narrow it down to just a few reasons as to why you should make them…

Not only are there very few ingredients needed to make crustless pizza, but these bad boys come together in the blink of an eye, without hardly any effort!
Here’s what you need to know, and some tips that’ll get your low carb chips into crispy, crunchy, delicious form:
Tools To Make Them
To bake these no crust pizza bites, use parchment paper or a silpat.
I prefer silpats, as they’re basically reusable parchment paper! If you do as much baking as I do, they’ll pay for themselves in no time…
If I have any leftover pizza bites (which is rare) stash them in the fridge in an airtight container — I recommend a hard container to help maintain their shape.
That said, this will take down their crunch factor, which is why I try to bake only as many as I plan to eat in a sitting. I mean they’re so easy, why not? Just make a fresh batch when you’re craving for healthy snacks!
Can You Freeze Them?
Totally! These make for awesome bite sized, low carb frozen pizza snacks! You can crisp them up in the oven again, or let them come to room temp and enjoy that way.
Fair warning: they’ll be less crispy.
Being the bites that they are, I often eat these for snacks in between meals, or serve them for low carb appetizers (they were quite the hit at our Superbowl party).
They make for great hiking snacks — their high fat, protein and calories content will give you the boost you need!
Try sandwiching 2 together with a little sauce in the middle, for crispy keto calzone bites, or dunking them in your favorite sauce!
Best Cheese For Crispy Pizza Crust
In the recipe below, I recommend a combo of mozzarella and cheddar for this low carb pizza crust, feel free to use whatever cheese combo you’re craving. The only important factor is to grab a MELTABLE cheese — varieties such a feta or blue cheese wont melt to form the delicious crisps you’re expecting.

How Can I Add Veggies As Toppings?
Maximize your veggie intake by adding some low carb vegetables on top of your pizza bites! Trust me, making a batch of these bad boys are WAY easier than whipping up a cauliflower pizza crust, or zucchini pizza.
The trick here, is to finely dice, and saute before adding any vegetables into the mix, as they won’t soften enough with the amount of time we’ll be baking our crisps.
How Can I Add More Protein?
I opted for pepperoni no crust pizza bites, but if you’d like to add more protein to the mix, try sprinkling your cheese with ground beef (ala meatza!) or chicken (similar to my favorite chicken crust pizza).
Be sure to use cooked meat!
Can I Turn This Keto Pizza Crust Into A Casserole?
These no crust pizza bites are better served as bite sized treats, but if you’re craving that triangle shape and handheld quality, bake your cheese in a nonstick skillet, with the lid until it has melted and crisped around the edges…
Remove the lid and allow the low carb pizza casserole to cool/crisp before slicing.

- 1 Cup Shredded Mozzarella
- 1 Cup Shredded Cheddar
- 12 Slices of Pepperoni or more
- ½ Teaspoon Italian Seasoning
- ¼ Cup Shredded Parmesan
- Parsley optional
- Low Carb Pizza Sauce optional for dipping
- Preheat oven to 375.
- Line a baking sheet with parchment paper or a silpat.
- Sprinkle mounds of mozzarella and cheddar cheese to the size of your liking on the baking sheet. (I made indv. mounds of cheddar and mozzarella, but you can combine the cheese if you’d prefer)
- Flatten out the mounds and sprinkle with Italian seasoning. Then top with a slice of pepperoni.
- Bake for about 12 minutes—you’ll know your pizza is done when the edges are golden brown.
- Take out of the oven. Sprinkle with parmesan and parsley. Allow them to cool before removing from the baking sheet.
- Serve with low carb pizza sauce, and enjoy!
