Its name just sounds like sunshine and honestly, it tastes like it, too. Sweet, crisp watermelon, crunchy jicama, fresh herbs and creamy feta – all incredible on their own and together,
WOW! It’s a pool party in my mouth! It’s one of my favorite (low carb recipes)healthy lunch ideas, and when I serve it as one of my healthy side dishes, it never fails to impress my guests.
I love that this is one of those low carb side dishes that can be both a side and a dessert, thanks to its juicy, red superstar fruit!

Jicama – Pick heavy, shiny, and healthy looking roots out for this dish. That means they’re ready to eat! Smaller ones mean they’re a bit sweeter.
Feta – This zesty cheese is lower in fat than other cheeses, and its scrumptious saltiness means you don’t need much to really get a punch of flavor!

To prep this in a mason jar, I put the lime juice on the bottom, followed by the jicama, then watermelon, herbs and feta. When I’m ready, just shake it up, or pour into a bowl. Lunch is served!
