I don’t recommend freezing your chicken salad, as the consistency will never quite the same after you freeze the avocados.

Oh, this is fun too!! There are so many scrumptious ways to tweak this recipe its kind of unbelievable. Adding boiled eggs (chopped of course) or bacon bits, or sometimes both is totally de-lish! BUT, you can do other things too.

Is This Recipe Low Carb?
Absolutely! Avocado chicken salad is most certainly a low carb chicken salad recipe.
If you want to get technical, Haas avocados tend to be creamier and higher in fat than their Florida counterparts. BUT, Florida avocados and Haas avocados are both low in carbs because of their high dietary fiber content.
Avocado Chicken Salad
- 1 Cup Chicken Breast cooked + cubed
- 1 Small (about 2/3 Cup) Avocado cubed
- 1/4 Cup Red Onions minced
- 1/2 Cup Celery diced
- 1/4 Cup Cilantro chopped
- 2 Tablespoon Lime Juice
- 1 Teaspoon Kosher Salt
- Add all ingredients to a bowl.
- Mix together with a fork. While mixing, mash the avocado to your liking (I like to keep the avocado primarily intact).
