So much flavor in every bite, here’s what you’ll need for this copycat chicken Bryan recipe, but a few tips to get the flavor just right.
- The chicken: Our recipe calls for chicken breast (although thighs work too). I much prefer thin chicken breasts, as they cook more easily and won’t overpower your dish with… chicken. If you have thick chicken breasts, consider slicing them in half or pounding them into thinner pieces.
- The sauce: Is an addicting combination of butter, garlic, onions, white wine, lemon juice, sun dried tomatoes, and basil. We’re basically making an Italian pico de Gallo, and it’s so incredibly good you’ll want to use it for every dish you make (yes Chilean sea bass and pan seared salmon, I’m looking at you!).
- The game changer: Goat cheese. Spread some over each chicken breast as they come off the grill.
How Can I Switch Things Up?
It’s your kitchen, your dinner, your rules! So feel free to modify this copycat Carrabba’s chicken Bryan to suit your cravings. Some ideas I have for you include:
- A different protein: As mentioned, this topping combo would be amazing over fish, grilled shrimp, fried eggs, etc.
- Get creative with the topping: Use fresh tomatoes, add capers, or mix in sauteed spinach, sauteed mushrooms, or even pickled onions.
- A different cheese? This can be done. Although I strongly recommend trying the goat cheese first. Melted mozzarella or a slab of cream cheese could also be delicious.

The sauce for this chicken Bryan recipe takes a bit of time–when making this dish, I like to throw the sauce together while the chicken is on the grill. Aside from that, it’s easy and VERY rewarding. Here are some step-by-step photos to guide you:
- Saute the garlic and onion in melted butter.
- Add the wine and lemon juice.
- Add the butter, sun dried tomatoes, and basil.
- Season chicken.
- Grill the chicken.
- Top warm resting chicken with goat cheese.
Serving Suggestions
This chicken Bryan recipe is absolutely incredible on it own for a low carb dinner. You can also serve it alongside classic Italian sides, to name a few:
- Creamy risotto, cauliflower risotto, or even plain rice.
- Toasted bread to soak up any additional sauce.
- Simple pasta dishes, such as buttered noodles or sauteed veggie noodles.
- Light salads like my arugula salad, shrimp Caesar salad, kale Caesar, or pizza salad.
- A bed of roasted vegetables. Think roasted cauliflower or roasted broccolini.
Storing + Reheating
As with most chicken breast recipes, this copycat Carrabba’s chicken Bryan is best served fresh, as chicken breast will dry out when reheated. That said, if you have leftovers, here’s how to make the most of them.
- Store your chicken breast, goat cheese, and topping separately.
- Reheat chicken and topping separately in the microwave until warm. The topping will only take a few seconds to get warm. Top your warm chicken breast with goat cheese.

Sauce:
- 2 tablespoons unsalted butter
- 1 tablespoon garlic minced
- 2 tablespoons yellow onion minced
- ½ cup dry white wine
- ¼ cup lemon juice
- 8 tablespoons unsalted butter sliced into 8 pieces and kept cold in the fridge until ready to use
- 1 ½ cups sun-dried tomatoes chopped
- ¼ cup fresh basil chopped
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Chicken:
- 6 skinless boneless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 – 8 ounce package Goat cheese
Instructions
- In a large skillet over medium heat, melt the butter. Once melted, add the garlic and onion, and saute until soft, about 4 minutes.
- Add the white wine and lemon juice and bring the liquid to a simmer. Continue to cook until the liquid has reduce by half, about 8 minutes. Turn the heat of your pan to low and add the butter, one stick at a time. Add the sun dried tomatoes, basil, kosher salt, black pepper and stir until incorporated. Remove from heat and cover with a lid to keep warm.
- Preheat your grill or grill pan to medium high heat. Clean and grease the grates. Pat chicken completely dry, then sprinkle with salt and pepper, and press to adhere.
- Cook chicken in grill pan or on the grill for 8-10 minutes on each side, until the internal temp of your chicken reaches 165 F.
- Place cooked chicken on a plate and divide the goat cheese over each breast. Spoon the sauce on top, and enjoy!
