Pickled Eggs Recipe Ingredients
- Beets: This is what gives our pickled egg recipe that gorgeous pink color. I typically use 2 beets, as it makes the egg white pink in about 2 hours. If you plan to pickle your eggs longer (for a more pickled flavor) and are looking for a lighter pink, opt for 1 beet; more on this below.
- Vinegar, sugar + salt: This is my go-to brine for pickling (veggies like pickled red onions too!). It’s got a great balance of tangy, sweet and salty.
Variations
- Not sweet: If you don’t want your beet pickled eggs to be sweet, and are just looking for a bit of color, skip the sugar. We do this all the time.
- Pickling spices: The pickled eggs recipe below is intentionally simple. If you’d like to add pickling spices, feel free.
- Different color: Thanks to the beets, pink is definitely the easiest color to achieve. That said, you can skip the beets and add a bit of turmeric to your pickled eggs recipe for yellow eggs.
How To Make Pickled Eggs
How to pickle eggs is about as easy as my recipes come! Simply make the brine, and adjust your pickling time to how pink and how flavorful you want your eggs to be. Here’s how:
- Combine brine ingredients in a saucepan.
- Bring to a simmer, and cook until the beet is tender.
- Allow it to cool completely.
- Pour into a bowl, and add the eggs.
- Brine as desired.
How Long Do Eggs Stay in Brine?
Truth be told, I usually make beet pickled eggs for the pink color, not the flavor. So I’ll typically pickle them for 2 hours. For pinker/more flavorful eggs, they can stay in the brine for 2-3 days. Here are some facts to keep in mind:
- Medium pink, not super pickled tasting: 2 hours, 2 beets
- Really pink, really flavorful: 2 days, 2 beets (this is how I pickled the eggs in the photos for this post)
- Lighter pink, not super pickled tasting: 2 hours, 1 beet
- Pink, really flavorful: 2 days, 1 beet
How to Serve
Serve your pickled egg recipe how you would any hard boiled egg. A few of our favorite ways include:
- Sprinkled with salt and pepper for a delicious snack.
- Sliced, on top of buttered toast.
- Diced and used to make deviled egg salad or avocado egg salad.
- Used to make pickled deviled eggs.
- Topping for your next salad, bowl of ramen, or pasta dish.
How long do pickled eggs last?
Once the eggs have been hard boiled (so including the days they sit in the brine), be sure to eat this pickled eggs recipe within 7 days, and store in the fridge. More on that here.

- 3 cup water
- 2 medium red beets peeled + sliced
- 1 cup white vinegar
- 1/4 cup sugar optional
- 1 teaspoon kosher salt
- 8 hard boiled eggs peeled
Instructions
- In a medium saucepan, combine the water, vinegar, sugar (if using), salt, and sliced beet and bring to a simmer. Cover with a lid and simmer until the beet is fork tender, about 20 minutes. Transfer liquid and beets to a large bowl or mason jar, and allow to cool completely.
- Once cool, place eggs in bowl/jar. Cover and place in the fridge. Eggs will be ready after 2-3 hours, but for pinker eggs with a more pickled flavor, allow them to sit in juice for 2-3 days. Enjoy!
