What is Green Beans Almondine?
Green beans almondine is a French dish made of tender-crisp green beans sautéed with butter, garlic, and toasted almonds. It’s a simple side with incredible texture. And it’s easy to make!
Ingredients You’ll Need
Gather these simple ingredients to create your green beans almondine:
- Green Beans: Fresh and trimmed.
- Butter: Unsalted butter for sautéing, providing richness and flavor.
- Garlic: Minced for aromatic flavor.
- Almonds: Sliced almonds, toasted to bring out their nutty essence.
- Salt and Pepper: For seasoning.
Not-So-Traditional Variations
- Citrus Twist: Add a splash of fresh lemon juice or grated lemon zest–Lemon pairs beautifully with the nutty taste of almonds.
- Herbs: Incorporate fresh herbs such as chopped parsley, thyme, or basil into the dish. Toss them with the green beans during the final sautéing stage.
- Cheesy Indulgence: Sprinkle grated Parmesan cheese over the green beans almondine just before serving for an extra layer of savory goodness. Take it from my parmesan brussels sprouts and parmesan roasted broccoli–it works!
- Crunchy Texture: Experiment with different nuts like pine nuts, pecans, or hazelnuts instead of almonds to provide varied textures and flavors.
- Bacon Infusion: For a savory twist, add crispy bacon bits or pancetta to the green beans almondine. The smoky flavor of bacon complements the beans and almonds perfectly.
- Spiced Variation: Incorporate a pinch of red pepper flakes or paprika for a subtle kick. These spices can add a hint of warmth to the dish without overpowering the flavors.
How to Make Green Beans Almondine
Follow these straightforward steps to prepare your green beans almondine:
- Blanch the green beans.
- Dunk in ice bath + drain.
- Toast the Almonds.
- Melt butter + saute garlic.
- Sauté the green beans.
- Add the almonds.
- Season and serve.
Make Ahead Tips
Although this dish can be made entirely ahead of time, you can also blanch the green beans up to 24 hours before you plan to serve–then saute them in butter just before you plate!
- Storing: Store any leftover green beans almondine in an airtight container in the refrigerator for up to 3 days.
- Reheating: Gently reheat the green beans almondine in a skillet over low heat, stirring occasionally until warmed through.
- Freezing: I don’t recommend freezing this dish.

Print Recipe Pin RecipeIngredients
- 1 pound fresh green beans trimmed
- 2 tablespoons unsalted butter
- 2 cloves garlic minced
- 1/3 cup sliced almonds toasted
- 1/2 teaspoon of both salt and pepper
Instructions
- Bring a large pot of salted water to a boil. Add green beans using tongs to prevent splashing. Meanwhile, prep an ice bath in a large bowl and place a colander in the sink. Allow green beans to blanch for 2-3 minutes, then transfer to an ice bath to prevent further cooking. Drain cooled green beans in the colander.
- Heat a large skillet over medium heat. Once the pan is warm, add the almonds and toast until they become slightly golden, about 4 minutes. Set toasted almonds aside on a plate.
- Add the butter to the same skillet. Once melted, add the garlic and saute until fragrant, 1 minute. Add the green beans and toss to coat. Continue to cook and coat the green beans for 2-3 minutes. Add the almonds and toss to combine. Remove pan from heat. Transfer to a serving plate, and enjoy!
