Prep. Preheat oven to 350° F and line a baking sheet with parchment paper.
Combine. Mix the dry ingredients in a bowl. Add egg (1) and warm water (1 cup) and stir to combine.
Shape + bake. Using wet hands, divide the dough into 4 balls (they will flatten as they cook) smoothing out the surface as you roll them. Place each ball on the prepared baking sheet and sprinkle the tops with sesame seeds. Optional: Brush the tops of the buns with a whisked egg for a golden sheen. Bake in preheated oven for 45 minutes. Allow them to cool slightly before slicing and enjoy!
Notes
Use fine-grain almond flour to give these buns a texture most similar to wheat flour. Bob's Red Mill, Trader Joe's, or Costco brands all make great options
Psyllium husk I strongly recommend using NOW Psyllium Husk Powder, as each brand absorbs liquid differently. Using a different brand will affect the structure and fluff.
Whey protein isolate adds additional fluff to these buns. This recipe has only been tested using ISO Pure protein powder.
