Bring eggs (12 large in size) to a boil in a pot, covered with 1 1/2" of water.
Once boiling, turn off the heat and secure the lid. Set aside and allow the eggs to cook like this for 18 minutes.
Once cooked, place eggs in a large bowl with water and ice to prevent them from cooking longer.
After the eggs have cooled enough to handle, peel the eggs and cut them in half lengthwise.
Place egg yolks in a large bowl and set aside.
Pour the Old Bay (1 tablespoon) onto a large plate.
Dip the cut side of each of the egg whites into the Old Bay, then place them cut side up on a plate.
Mash the egg yolks with a fork along with mayonnaise (1/4 cup), salt (1/4 teaspoon), and hot sauce (1 tablespoon).
Add blue cheese (1/4 cup) and finely chopped celery (1/3 cup) and stir together using a rubber spatula.
Taste test the filling to ensure it's as spicy as you would like. If you want it to be spicier, add more hot sauce, OR (do what I did...) and drizzle additional hot sauce on top once assembled.
Scoop the filling into each of the egg whites. Enjoy!
