Low Carb Chicken Soup
This easy low carb chicken soup recipes here to warm you from the inside out! Full of keto veggies, chicken, delicious herbs and takes less than 30 minutes to throw together!

- 2 Tablespoons Butter
- 1 Cup Onion chopped
- 1 Cup Celery chopped
- 1 Cup Carrots chopped
- 4 Cloves Garlic
- 2 Pounds Chicken cooked, chopped, I used a combo of chicken breast and thighs
- 8 Cups Chicken Broth
- 1 Sprig Rosemary fresh
- 4 Sprigs Thyme fresh
- 1 Bay Leaf
- 4 Cups Cabbage shredded
In a large pot, melt butter over medium heat.
Add chopped onions, celery and carrots and cook for about 5 minutes, until veggies begin to soften.
Add garlic and cook for 1 minutes, stirring to ensure it doesn't burn.
Add cooked chicken and give the ingredients a stir.
Add chicken broth, rosemary, thyme and bay leaf.
Bring contents to a boil, then reduce heat to a simmer and cook for 10 minutes uncovered.
Add shredded cabbage, stir, and cook for an additional 10 minutes.
Remove from heat, and remove bay leaves, thyme sticks and rosemary sticks. (I remove the leaves from the thyme and rosemary and toss them back into the soup)
Allow low carb chicken soup to cool and enjoy!
