Deviled Eggs with Relish

- 12 Large Eggs
- 1/2 Cup Mayonnaise or Greek yogurt
- 1/2 Teaspoon Smoked Paprika
- 1/2 Teaspoon Kosher Salt
- 3 Tablespoons Relish
- 2 Tablespoons Black Olives finely chopped
- 1/4 Cup Red Onion finely chopped
Cover eggs (12 large in size) in 1 1/2" of water in a large pot, and bring to a boil.
Once boiling, turn off the heat and cover the pot with a lid. Allow the eggs to cook like this for 18 minutes.
After 18 minutes, place eggs in a large bowl filled with ice and water to stop them from cooking longer.
Peel the eggs.
Cut eggs in half lengthwise, and place the egg whites cut side up on a plate and the yolks in a large bowl.
Add mayonnaise (1/2 cup), paprika (1/2 teaspoon) and salt (1/2 teaspoon) to the bowl with the egg yolks.
Mash ingredients together using the back of a fork until creamy.
Use a rubber spatula to stir in the relish, finely chopped olives (2 tablespoons) and finely chopped red onions (1/2 cup).
Use a spoon to scoop the filling into each of the egg whites. Enjoy!
