Deviled Eggs with Relish

Ingredients

  • 12 Large Eggs
  • 1/2 Cup Mayonnaise or Greek yogurt
  • 1/2 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Kosher Salt
  • 3 Tablespoons Relish
  • 2 Tablespoons Black Olives finely chopped
  • 1/4 Cup Red Onion finely chopped

Instructions

  • Cover eggs (12 large in size) in 1 1/2" of water in a large pot, and bring to a boil.
  • Once boiling, turn off the heat and cover the pot with a lid. Allow the eggs to cook like this for 18 minutes.
  • After 18 minutes, place eggs in a large bowl filled with ice and water to stop them from cooking longer.
  • Peel the eggs.
  • Cut eggs in half lengthwise, and place the egg whites cut side up on a plate and the yolks in a large bowl.
  • Add mayonnaise (1/2 cup), paprika (1/2 teaspoon) and salt (1/2 teaspoon) to the bowl with the egg yolks.
  • Mash ingredients together using the back of a fork until creamy.
  • Use a rubber spatula to stir in the relish, finely chopped olives (2 tablespoons) and finely chopped red onions (1/2 cup).
  • Use a spoon to scoop the filling into each of the egg whites. Enjoy!
