Ingredients

Eggs:

  • 12 Large Eggs
  • 1 Tablespoon Cajun Seasoning*

Filling:

  • 1/4 Cup Mayonnaise
  • 1/4 Teaspoon Kosher Salt
  • 1 Tablespoon Hot Sauce
  • 1/4 Cup Blue Cheese
  • 1/3 Cup Celery finely chopped

Instructions

  • Bring eggs (12 large in size) to a boil in a pot, covered with 1 1/2" of water.
  • Once boiling, turn off the heat and secure the lid. Set aside and allow the eggs to cook like this for 18 minutes.
  • Once cooked, place eggs in a large bowl with water and ice to prevent them from cooking longer.
  • After the eggs have cooled enough to handle, peel the eggs and cut them in half lengthwise.
  • Place egg yolks in a large bowl and set aside.
  • Pour the Old Bay (1 tablespoon) onto a large plate.
  • Dip the cut side of each of the egg whites into the Old Bay, then place them cut side up on a plate.
  • Mash the egg yolks with a fork along with mayonnaise (1/4 cup), salt (1/4 teaspoon), and hot sauce (1 tablespoon).
  • Add blue cheese (1/4 cup) and finely chopped celery (1/3 cup) and stir together using a rubber spatula.
  • Taste test the filling to ensure it's as spicy as you would like. If you want it to be spicier, add more hot sauce, OR (do what I did...) and drizzle additional hot sauce on top once assembled.
  • Scoop the filling into each of the egg whites. Enjoy!

Notes

  • Cajun Seasoning doesn't add a lot of "spice" but it decorates the edge and adds some flavor. If you want to leave it out, no problem! Just increase the salt in the filling by 1/4 teaspoon.
