Keto Gummy Bears

Ingredients

  • 1/2 Cup cold water
  • 3 Tablespoons Berry Powder I used strawberry + blackberry (note 1)
  • 1/2 Cup Swerve, Lakanto, or Trader Joe's Allulose granular (note 2)
  • 3 - 3 1/2 Tablespoons Gelatin (note 3)
  • 1/4 teaspoon Berry extract optional for a fruitier flavor. Use some flavor as powder (note 4)

Instructions

  • Prep. Prepare your gummy molds (note 5) by placing them on a rimmed baking sheet -- this makes them easier to transport to the fridge.
  • Combine. Pour cold water (1/2 cup) into a glass liquid measuring cup. Sprinkle gelatin (3 - 3 1/2 tablespoons) on top, and whisk until the gelatin dissolves. Set aside for 10 minutes.
  • Heat. After 10 minutes, your measuring cup should be full of clear jello. Microwave on high for 30 seconds. Remove from the microwave and whisk ingredients together. Return and microwave on high for another 30 seconds.
  • Flavor. Whisk ingredients together again, they should be fully liquid (if not, place in the microwave for another 15 seconds). Add the berry powder (3 tablespoons), sweetener (1/2 cup), and extract (1/2 teaspoon) and whisk until all clumps have dissolved.
  • Shape + chill. Working quickly, pour liquid into your prepared gummy mold. Place in the fridge for 45 minutes - 1 hour, or until you're able to easily remove the gummies from the mold. Enjoy!

Notes

  1. Berry Powders. My favorites are strawberry, raspberry, and blueberry -- these are easiest to find on Amazon.
  2. Sweetener - Lakanto, Swerve, or Trader Joe's Allulose. My preferred sweetener for these gummies is Trader Joe's Allulose, as it doesn't recrystallize when cool (erythritol products DO recrystallize, and create a gritty texture).
  3. Gelatin - the amount you use with vary depending on the sweetener:
    1. If using Lakanto or Swerve, use 3 tablespoons.
    2. If using Trader Joe's Allulose, use 3 1/2 tablespoons.
  4. Berry extract - berry powder is great, but extract brings an extra oomph of flavor! I grab this on Amazon.
  5. Gummy bear mold - I use this one.
