Lemon Pepper Salmon

Ingredients

  • 1.5 pounds Salmon cut into 4 pieces
  • 4 large carrots peeled and cut into into 3” matchsticks
  • 3 cups broccoli florets cut into even pieces
  • 4 cloves garlic minced
  • 3 tablespoon lemon pepper
  • 3 tablespoon lemon juice
  • 6 tablespoons butter melted + unsalted

Instructions

  • Preheat oven to 400 F.
  • Arrange salmon, carrots, and broccoli on a rimmed baking sheet.
  • In a small bowl, whisk together the garlic, lemon pepper, lemon juice, and melted butter. Set aside 2 tablespoons of lemon pepper butter before moving forward.
  • Drizzle the lemon butter over the salmon and veggies, and toss to coat the veggies.
  • Bake in preheated oven for 15-18 minutes, or until the salmon is just cooked through. Drizzle salmon with additional lemon pepper before serving, and enjoy!
