Greek Chicken Marinade

- 1/2 cup olive oil
- 6 cloves garlic minced
- 2 lemons juiced
- 1 lemon zested
- 4 teaspoons fresh oregano minced
- 1 tablespoon fresh thyme minced
- 1 tablespoon fresh rosemary minced
- 2 1/2 teaspoon salt
- 1 1/2 teaspoon black pepper
- 4 pounds chicken breasts about 6 large breasts
Place is all marinade ingredients in a large resealable bag, nestled inside a shallow baking dish or bowl. Toss to combine. Add the chicken and toss to coat.
Marinade in the fridge for 30 minutes - 2 hours, but no longer than 2 hours.
To cook, grab a meat thermometer and check that the breast has reached an internal temp of 165 F. You can cook your chicken breast on the:Grill - Set to medium-high heat, and grill on each side for about 6-8 minutes, until the breast is cooked through.Oven baked - Preheat oven to 400 F. Place chicken on a rimmed baking sheet. Bake untill cooked through, should be between 18-25 minutes.Pan seared - Heat a pan to medium heat, and sear on each side for 6-8 minutes. If using an extra thick breast I find placing the lid on top and slightly reducing the heat to be helpful in cooking the breast all the way through. Allow your chicken to rest for 10 minutes before slicing, and enjoy!
