Roasted Broccolini

- 2 pounds broccolini about 2 bunches. bottom 1" removed
- 3 tablespoons olive oil more if needed!
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Preheat oven to 400 F, and grab a rimmed baking sheet--option to line it with parchment paper for easy cleanup.
Slice broccolini stems lengthwise so they're all roughly the same size. Spread them onto 2 rimmed baking sheets in a single layer. Drizzle with olive oil, and sprinkle with salt and pepper, making sure to really coat the tops of your broccolini in oil as these will burn most easily (I sometimes will dip them in oil!). Feel free to use more oil to ensure they're well coated.
Bake in preheated oven for 12-15 minutes. You'll know the broccolini is done one the edges have caramelized and the stalks are soft. Taste and adjust seasoning to your liking before serving.
