Ingredients

  • 2 Plantains
  • 1 Tablespoon Coconut Oil melted
  • ½ Teaspoon Kosher Salt more or less depending on how salty you like your chips!

Instructions

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Cut off the ends of the plantains, then cut along the length of the plantain. This is to score the peel so it can easily be taken off, so the cut shouldn’t go very deep into the plantain.
  • Take the peel off the plantain, and thinly slice the plantain. You want the slices to be as even as possible, use a mandolin for best success!
  • In a bowl, add the sliced plantain chips and toss them in the melted coconut oil.
  • Transfer the chips to the baking sheet and sprinkle with salt.
  • Bake for 20-25 minutes, and enjoy! Happy baking ?

Nutritional information is based on 1 serving, if you divide this recipe into 4 servings (everyone will slice their plantains into a different number of "chips", so the easiest way to calculate is to divide your chips into servings once you've sliced them):
