Almond Flour Chocolate Chips Cookies with Coconut

Instructions

  • In a large bowl, mix together the dry ingredients (almond meal (or Almond Flour), dark chocolate, shredded coconut, baking powder, salt and sugar)
  • In a small bowl, beat egg until it doubles in size and becomes a consistent color
  • Stir the coconut oil and vanilla into the egg
  • Pour the wet ingredients into the dry ingredients and mix until they’re just combined
  • Let this combination chill in the fridge for at least 30 minutes, or even overnight
  • Preheat the oven to 375 degrees
  • Grease a baking sheet (I used melted coconut oil)
  • Shape the dough into 1″ balls with about 1 1/2″ of space between each
  • Press the balls down slightly to flatten
  • Bake these cookies for 7-10 minutes, you will see the edges start to brown
  • Let the cookies cool before serving, and enjoy!
