Almond Flour Chocolate Chips Cookies with Coconut

In a large bowl, mix together the dry ingredients (almond meal (or Almond Flour), dark chocolate, shredded coconut, baking powder, salt and sugar) In a small bowl, beat egg until it doubles in size and becomes a consistent color
Stir the coconut oil and vanilla into the egg
Pour the wet ingredients into the dry ingredients and mix until they’re just combined
Let this combination chill in the fridge for at least 30 minutes, or even overnight
Preheat the oven to 375 degrees
Grease a baking sheet (I used melted coconut oil)
Shape the dough into 1″ balls with about 1 1/2″ of space between each
Press the balls down slightly to flatten
Bake these cookies for 7-10 minutes, you will see the edges start to brown
Let the cookies cool before serving, and enjoy!
