Low Carb Cheese Dogs

Ingredients

  • 2 Large Zucchinis
  • 4 Hot Dogs
  • 1 Cup Keto Queso can sub for shredded cheddar (less work!)
  • 1/4 Cup Chives

Instructions

  • Preheat your grill.
  • Remove and discard the top and bottom of the zucchinis (2 large in size), then cut in half lengthwise.
  • Use a spoon to hollow out the center of the zucchini.
  • Brush both sides of the zucchini with oil.
  • Grill zucchini and hot dogs (4) over direct high heat. Cook the zucchini for 5 minutes on each side. Before removing the zucchini, make sure they're tender to your liking. (I like them to be tender but not so soft that you can't hold the zucchini like a bun).
  • If using cheese (instead of queso) sprinkle it over the zucchini and continue to cook for 2 additional minutes.
  • Place a hot dog in the center of each zucchini.
  • If using my low carb queso, make sure it's nice and warm! Then pour it over your hot dogs.
  • Sprinkle with chives, and enjoy!
