Broccoli Quiche

Ingredients

  • 1 Pie Crust I use this low carb pie crust
  • 2 Cups Broccoli chopped, fresh
  • 1 Cup Onion yellow, diced
  • 8 Eggs large
  • 1 Cup Heavy Cream
  • 1/2 Teaspoon Kosher Salt
  • 1/4 Teaspoon Pepper
  • Pinch Red Pepper Flakes
  • 1 Cup Sharp Cheddar Cheese shredded

Instructions

  • Preheat the oven to 400°.
  • Prepare your pie crust (1) and set it aside to cool.
  • Add veggie oil to a large nonstick.
  • Once shimmering, add chopped broccoli (2 cups) and diced yellow onions (1 cup). Saute until softened and the onions are translucent (about 12 minutes).
  • In a large bowl, whisk together heavy cream (1 cup) and large eggs (8).
  • Add cooked broccoli, onions, shredded cheese (1 cup), salt (1/2 teaspoon), pepper (1/4 teaspoon), and red pepper flakes (a pinch) and stir to combine.
  • Pour over the prepared pie crust.
  • Bake for 40-45 minutes*, or until the center is firm and the edges look slightly golden.
  • Allow the quiche to cool before slicing, and enjoy!

Notes

  • Pie Crust - I always use my low carb pie crust for this!
  • Burning the crust - Some pie crusts burn easily, to prevent this, create a collar to protect your crust with foil.around the edge of the crust using tin foil.
