Pesto Chicken Salad

Ingredients

  • 1/2 Cup Pesto
  • 1/4 Cup Greek Yogurt or mayonnaise
  • 1 tablespoon lemon juice
  • 2 Cups Chicken Breast fully cooked + chopped or shredded
  • 1/4 Cup Red Onion finely chopped
  • 1/3 cup sun dried tomatoes diced
  • Salt + Pepper to taste this will depend on how salted your pesto is

Instructions

  • Place everything in a large bowl and toss to combine. Taste, and add salt and pepper to your liking.
  • Serve as a sandwich or lettuce wraps, and enjoy!
