Ingredients

  • 8 Cups Watermelon chopped (about 1/2 a medium watermelon)
  • 2 Cups Cucumber diced
  • 3/4 Cup Fresh Cilantro chopped
  • 1/4 Cup Fresh Mint chopped
  • 1/2 Jalapenos diced + deseeded
  • 1/4 Cup Lime Juice
  • 3/4 Cup Feta crumbled

Instructions

  • Add ingredients to a large bowl, and stir to combine.
  • Place in the fridge for 1 hour before serving, and enjoy!

Notes

To save some carbs: use cucumber instead of jicama! Jicama adds 2.3 g of carbs per serving.
