Chicken Salad with Grapes

Ingredients

Dressing:

  • 1 Cup Mayonnaise
  • 1 Tablespoon Lemon Juice
  • 2 Teaspoons Sugar* use erythritol if low carb

Salad:

  • 3 Cups Chicken cooked + cubed
  • 1 Cup Celery diced
  • 1 Cup Red Grapes* seedless + halved. To save some carbs, swap these with blackberries!
  • 3/4 Cup Walnuts chopped
  • 3/4 Cup Coconut shredded + unsweetened. Optional

Instructions

  • In a small bowl, combine the dressing ingredients.
  • In a large bowl, combine the salad ingredients.
  • Pour the dressing over the salad and toss everything together.
  • Place your salad in the fridge for 30 minutes before serving, and enjoy!

Notes

*If making the low carb version of this recipe (erythritol instead of sugar, and blackberries instead of grapes), there are 8.4 g TOTAL carbs per serving, and 6 g net carbs.
