Add veggie oil (2 tablespoons) to a large skillet over medium heat.
Once shimmering, add chopped onions (1 cup) and cook until it softens -- about 5 minutes.
Stir in taco seasoning (3 tablespoons) and toast these spices until they become fragrant -- about 2 minutes.
Add ground chicken (1 Lb) and cook until it browns, breaking up with the back of your spoon as you cook.
Add tomato sauce (8 Ounces), vinegar (1 1/2 teaspoons), salt (2 teaspoons) and black pepper (1/2 teaspoons) and cook uncovered for about 10 minutes, or until the sauce has thickened to your liking.
Serve with tortillas and your favorite toppings, and enjoy!

Mild Tasting Oil. You want an oil with a high smoke point and mild flavor -- think avocado, vegetable, safflower, sunflower, peanut. Skip EVOO, coconut, or sesame oil.
