Paleo Meatballs

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 1/2 Cups Onions minced
  • 6 Cloves Garlic minced
  • 2 Pounds Ground Beef 80/20
  • 1 Pound Sweet Italian Sausage casing removed
  • 1 Tablespoon Italian Seasoning
  • 1 Pinch Red Pepper Flakes
  • 2 Large Eggs lightly beaten
  • 1 Teaspoon Kosher Salt
  • 1/2 Teaspoon Black Pepper

Instructions

  • Preheat oven to 400 F and line 2 rimmed baking sheets with parchment paper.
  • Add olive oil to a large nonstick.
  • Once shimmer, add the minced onions and saute until translucent, about 8 minutes.
  • Add garlic and toss until fragrant, about 2 minutes.
  • In a large bowl, combine the cooked onions and garlic, ground beef, Italian sausage, Italian seasoning, pepper flakes, eggs, salt and pepper thoroughly with your hands.
  • Form 40 meatballs and place them a few inches apart on your prepared baking sheets.
  • Bake in preheated oven for 18-22 minutes. You’ll know they’re done when the center is cooked through and no longer pink.
  • Serve over your favorite paleo pasta, and enjoy!
