Preheat oven to 400 F and line 2 rimmed baking sheets with parchment paper.
Add olive oil to a large nonstick.
Once shimmer, add the minced onions and saute until translucent, about 8 minutes.
Add garlic and toss until fragrant, about 2 minutes.
In a large bowl, combine the cooked onions and garlic, ground beef, Italian sausage, Italian seasoning, pepper flakes, eggs, salt and pepper thoroughly with your hands.
Form 40 meatballs and place them a few inches apart on your prepared baking sheets.
Bake in preheated oven for 18-22 minutes. You’ll know they’re done when the center is cooked through and no longer pink.
Serve over your favorite paleo pasta, and enjoy!
