Ground Chicken Casserole
This healthy ground chicken casserole is the easiest, tastiest, low carb -iest of recipes! Guaranteed the whole family will love it!

- 2 Tablespoon Vegetable Oil
- 1 Red Onion diced
- 32 Ounces Cauliflower Rice
- 1 Teaspoon Salt
- 1.2 Teaspoon Pepper
- 2 Lbs Ground Chicken
- 1/4 Cup Low Carb Taco Seasoning
- 1 14.5 ounce can diced tomatoes with green chile peppers, drained
- 1/2 Cup Water
- 8 Ounces Cream Cheese cubed
- 3 Cups Cheddar Cheese shredded
Preheat oven to 400 F and prepare an 8x8 casserole dish with cooking spray.
Heat 1 tablespoon of vegetable oil in a large pan over medium heat.
Add diced red onions. Cook for 6 minutes, or until soft.
Add riced cauliflower, 1 teaspoon salt and 1/2 teaspoon pepper and cook for about 5 minutes, just until it begins to soften.
Add veggies to prepare casserole dish in an even layer.
Cover with 1 cup of shredded cheddar cheese.
Heat remaining tablespoon of vegetable oil in the same pan over medium heat.
Add ground chicken, and break up using the back of a spoon. Cook until no longer pink.
Add diced tomatoes with green chile peppers, water, and taco seasoning. Stir to combine and bring combo to a boil.
Reduce to a simmer and cook for for 5-7 minutes, or until hardly any liquid is left.
Turn off heat and add cubed cream cheese — Stir until melted and fully combined.
Add chicken and veggie combo in an even layer to the casserole dish.
Cover with 2 Cups of shredded cheddar.
Bake in the oven for 20 minutes, or until the cheese has melted.
Allow to cool, serve with avocado, cilantro and enjoy!
- Can swap the meat for any type of ground meat.
- Can swap cauliflower rice for cooked rice instead.
