Seed Bread

Ingredients

  • 2 Tablespoon Sunflower Seeds
  • 2 Tablespoons Pepitas
  • 1 Tablespoons Sesame Seeds
  • 3 Cups Almond Flour* finely ground
  • 2 Tablespoons NOW Powdered Psyllium Husk powder
  • 2 Tablespoons Flaxseed Meal
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Kosher Salt
  • 4 Eggs large
  • 4 Tablespoons Olive Oil
  • 2 Tablespoon Apple Cider Vinegar
  • 1/4 Cup Warm Water

Instructions

  • Preheat oven to 350 F and prepare and 8” bread pan with parchment paper or butter.
  • Mix Sunflower Seeds, pepitas and sesame seeds in a small bowl and set aside.
  • In a large bowl, combine almond flour, psyllium husk, flaxseed meal, baking soda, salt and half of the seed combo.
  • Add eggs, olive oil and apple cider vinegar and stir to combine.
  • Add boiling water water and stir.
  • Pour ingredients into the prepared bread pan.
  • Sprinkle remaining seeds on top of the bread.
  • Bake in the oven for 45-55 minutes. The bread is done when a toothpick inserted in the center comes out clean and the top looks crustlike.
  • Allow the bread to cool in the pan before slicing and serving. Enjoy!

Notes

Nutritional information is based on 1 slice, if you cut this bread into 16 slices.
 
*Using a fine grained almond flour will yield better results. I've had great results with both Bob's Red Mill and Trader Joes almond flour.
 
** Some psyllium husk powders can turn baked goods into a blue-ish purple color. I use NOW Foods psyllium husk powder, and haven't had this issue.
