Pat salmon dry with paper towels. Sprinkle with salt and pepper, and press to adhere.
In a large pan (such as a cast iron), melt the butter over medium heat. Add the garlic and ginger, and saute until fragrant, about 1 minute. Add the water, soy sauce, sriracha, lemon juice, red pepper flakes, and honey. Stir to combine.
Place the salmon skin side down (even if using skinless) in your pan. Cook, basting the salmon in sauce frequently, until the skin is crispy, or the bottom is golden. Flip, and continue to cook on the other side until golden and salmon is cooked through.
Be sure to drizzle salmon with additional sauce before serving, and enjoy!
