Curried Egg Salad

Ingredients

Dressing:

  • 1/3 Cup Mayonnaise
  • 2 Teaspoons Lemon Juice
  • 2 Teaspoons Curry Powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Salad:

  • 8 Hard Boiled Eggs chopped
  • 1/4 Cup Celery diced
  • 1/4 Cup Red Onion diced
  • 1/4 Cup Raisins
  • 1/4 Cup Roasted Cashews chopped

Instructions

  • Whisk dressing ingredients together in a small bowl.
  • Add all salad ingredients to a large bowl. Drizzle with dressing, and toss to combine. Bonus points if you place the salad in the fridge for 30 minutes before serving, to marry the flavors. Enjoy!
