Ingredients

  • 2 cups chicken cooked + shredded or cubed
  • 4 cups kale chopped. leaves only, stems discarded
  • 1/2 avocado sliced
  • 1 cup cherry tomatoes halved
  • 1/3 cup red onion thinly sliced
  • 1/4 cup pepitas roasted
  • 1/4 cup cotija crumbled

Dressing:

  • 1/4 cup Greek yogurt
  • 1/4 cup water
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • 1/2 avocado
  • 1/2 jalapeno deseeded + stems removed
  • 1/4 cup fresh cilantro leaves loosely packed
  • 2 cloves garlic
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 3/4 teaspoon salt

Instructions

  • Combine all dressing ingredients together in a food processor or blender, and blend until smooth.
  • Place all salad ingredients together in a large bowl.
  • Pour dressing on top and toss to combine. Enjoy!
