Kale Chicken Salad

- 2 cups chicken cooked + shredded or cubed
- 4 cups kale chopped. leaves only, stems discarded
- 1/2 avocado sliced
- 1 cup cherry tomatoes halved
- 1/3 cup red onion thinly sliced
- 1/4 cup pepitas roasted
- 1/4 cup cotija crumbled
Dressing:
- 1/4 cup Greek yogurt
- 1/4 cup water
- 2 tablespoons olive oil
- Juice of 1 lime
- 1/2 avocado
- 1/2 jalapeno deseeded + stems removed
- 1/4 cup fresh cilantro leaves loosely packed
- 2 cloves garlic
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- 3/4 teaspoon salt
Combine all dressing ingredients together in a food processor or blender, and blend until smooth.
Place all salad ingredients together in a large bowl.
Pour dressing on top and toss to combine. Enjoy!
