If I had to pick just one recipe that screams SUMMER, it would be this watermelon salad…
Its name just sounds like sunshine and honestly, it tastes like it, too. Sweet, crisp watermelon, crunchy jicama, fresh herbs and creamy feta – all incredible on their own and together,
WOW! It’s a pool party in my mouth! It’s one of my favorite (low carb recipes)healthy lunch ideas, and when I serve it as one of my healthy side dishes, it never fails to impress my guests.
I love that this is one of those low carb side dishes that can be both a side and a dessert, thanks to its juicy, red superstar fruit!
Ok, ok, let’s dive in!
This watermelon salad recipe really hits the spot when you need a quick, healthy recipe.
- The ingredients are inexpensive and easy to get!
- It’s an amazing combo of sweet and salty, with that incredible CRUNCH factor!
- It’s easy to prep ahead and throw together for a quick meal or get-together!
This watermelon salad is so easy, so delicious, packed with vitamins and antioxidents! Seriously a dream come true!
Watermelon – When buying watermelon, look for one that sounds hollow when knocked and with a large yellow spot on its side. I know, it looks LESS appealing, but its actually a sign of it ripening in the sun. Yum!
Jicama – Pick heavy, shiny, and healthy looking roots out for this dish. That means they’re ready to eat! Smaller ones mean they’re a bit sweeter.
Feta – This zesty cheese is lower in fat than other cheeses, and its scrumptious saltiness means you don’t need much to really get a punch of flavor!
Have you jumped in on the mason jar salad craze? It’s a pretty amazing way to meal prep and have delicious, healthy recipes on hand all the time.
This watermelon salad is absolutely perfect for mason jars!!
To prep this in a mason jar, I put the lime juice on the bottom, followed by the jicama, then watermelon, herbs and feta. When I’m ready, just shake it up, or pour into a bowl. Lunch is served!
Meal Prepping Tips
This watermelon salad is perfect for mason jar salad, but you can also prep all of the ingredients ahead of time to make it SUPER fast to throw together. Pro tip – I store cut watermelon chunks in a strainer, nested in a bowl. Cover it all with plastic wrap, to keep the watermelon super crispy and not at all soggy.
This watermelon is beyond scrumptious as is, but if you’re feeling creative, here are a few variations you may wanna try:
Can I Add Other Fruit To This Salad?
Watermelon is the crunchy, red star of this dish, but that doesn’t mean it’s not flexible…
Have extra berries on hand? Try out a version of blueberry salad, or slice up some strawberries for a strawberry salad! Or, swap out those sweeter fruits for an unbelievable tomato salad that is TOO DIE FOR with that feta!
Can I Add Greens?
This watermelon salad with cilantro makes a great base for adding in some extra veggies! Try out a watermelon salad with basil, or add in some baby greens for a delicious spinach salad.
Massaged kale salad is a another great one to try as a healthy side for any meal!
What Savory Dressing Can I Try?
Dressing is the beautiful, tasty accessory for any well-planned dish.
If you’re sticking the recipe below, I wouldn’t go too crazy with salad dressing. But, if you’d like to add a few watermelon slices to your next chicken caesar salad, bbq chicken salad or honey mustard chicken salad then by all means!
(Let me know what you try in the comments below…)
Can I Add Other Cheese To This Salad?
I always love this watermelon salad with red onion and feta, but there are so many other ways to dress it up!
- Make a delicious goat cheese salad by adding in some chevre
- Add fresh mozzarella and tomato for an incredible caprese salad
Can I Add Cucumber In This Salad?
The jicama helps keep this watermelon salad vegan with added crunch and filling power, but there are a lot of other veggies that add texture, color and straight up deliciousness, like cucumbers! Slice ’em up and toss them in!
Just like watermelon, cucumbers are SO full of water, and they make for deliciously refreshing salads come summer time. Try this tasty Japanese cucumber salad or this creamy cucumber salad for some exciting options.
