Don’t Want None Unless You Got Low Carb Hamburger Buns, Hun

Recently we had a cookout with friends. I made a bunch of these low carb hamburger buns, which were (believe it or not) enjoyed by all. Low-carb-ers and non-low-carb-ers alike. They were so fluffy and soft it was almost shocking. Especially since they’re yeast-free (which is why they’re so easy to throw together).

But that’s not the best part…

The best part is that there’s NO CHEESE IN THIS DOUGH, unlike every other keto hamburger bun recipe. Nothing against fathead dough– it really is delicious. BUT, I prefer my cheese melted over a big juicy burger. It’s an important part of that tower of flavor thank you, very much.

Important Ingredient Notes

1. Almond flour– This keto flour is most similar to wheat in taste, texture, and appearance. I love Bob’s Red Mill, Trader Joe’s, and Costco brands as their fine-grained, which gives these gluten free hamburger buns the best texture.
2. Psyllium Husk Powder adds “fluff” while binding everything together. This recipe has only been tested using NOW psyllium husk–Other brands can change the color of baked goods, giving them a blue-ish purple tint.
3. Whey protein powder helps give our bread additional fluff and structure. Make sure to get unflavored protein powder, my favorite brand is ISO Pure.

☝️ Pro Tip: Make a Double Batch + Freeze

Keto hamburger buns take about an hour to bake, so we like to make a big batch and have them ready in the freezer. Freeze them on a baking sheet in a single layer first (this prevents them from sticking together). Then after an hour, toss them all in a large ziplock and back into the freezer.

🤔 How Many Net Carbs are in a Hamburger Bun?

In a traditional hamburger bun, there are 28 g carbs/net carbs. On the other hand, these keto burger buns have 5g net carbs! Take that!

When evaluating the carbs in hamburgers, you’ll also want to be careful about the patty itself (don’t add breadcrumbs) and the toppings. Sauces like honey mustard, BBQ sauce, and ketchup can add up in carbs quickly!

If homemade buns aren’t your thing, there are a handful of veggies you can use to give you that handheld burger feel. Including:

Ingredients

• ▢ 1 Cup Almond Flour (note 1)
• ▢ 1 Tablespoon Baking Powder
• ▢ 4 Tablespoons NOW Powdered Psyllium Husk (note 2)
• ▢ 3 Tablespoons Whey Protein Powder unflavored! (note 3)
• ▢ 1 Teaspoon Kosher Salt
• ▢ 1 Cup Warm Water
• ▢ 1 Egg whisked
• ▢ Sesame Seeds

US Customary - Metric

Instructions

• Prep. Preheat oven to 350° F and line a baking sheet with parchment paper.
• Combine. Mix the dry ingredients in a bowl. Add egg (1) and warm water (1 cup) and stir to combine.
• Shape + bake. Using wet hands, divide the dough into 4 balls (they will flatten as they cook) smoothing out the surface as you roll them. Place each ball on the prepared baking sheet and sprinkle the tops with sesame seeds. Optional: Brush the tops of the buns with a whisked egg for a golden sheen. Bake in preheated oven for 45 minutes. Allow them to cool slightly before slicing and enjoy!

1. Use fine-grain almond flour to give these buns a texture most similar to wheat flour. Bob's Red Mill, Trader Joe's, or Costco brands all make great options 
2. Psyllium husk I strongly recommend using NOW Psyllium Husk Powder, as each brand absorbs liquid differently. Using a different brand will affect the structure and fluff.
3. Whey protein isolate adds additional fluff to these buns. This recipe has only been tested using ISO Pure protein powder.
