Keto Yogurt

- 2 Cups Fruit I used sliced strawberries and blueberries
- 1/4 Cup Swerve or Lakanto (see sweetener notes below) granular
- 2 Cups Greek Yogurt I use Fage or Trader Joe's brand
Optional Mix-Ins:
- 1/2 Cup Coconut shredded + unsweetened
- 1/4 Cup Nut Butter Make sure your nut butter is "wet"
Instructions
- Blend fruits (2 cups) in a food processor until only small pieces remain (see photo).
- Place fruits in a large bowl. Use a rubber spatula to stir in the erythritol (1/4 cup).
- Add Greek yogurt (2 cups) and fold together with the fruits. If you want them to look tie-dyed, lightly swirl together — if you'd prefer them to be a solid color, stir until well combined. Taste and add more sweetener if desired.
- Pour evenly into popsicles molds (small Dixie cups work well here too!).
- Toss popsicle molds in the freezer for an hour, then insert the popsicle sticks. Place them back in the freezer for another 3 hours, or until they're completely frozen.
- Run popsicle molds under warm water to remove and enjoy!

- Lakanto, Swerve, or Erythritol. I stick to Lakanto and Swerve which are a 1:1 swap with traditional sugar. If using a different brand of Erythritol, keep in mind it’s 70% as sweet as sugar, so you may need to add more to taste.

The Greek yogurt we eat is Kalona Super Natural Organic whole milk Greek yogurt. It only had 3 carbs per ½ cup serving. ?

I believe this little recipe is still low carb – take 1/4 cup Fage plain 2% Greek yogurt and top it with 1 halved red plum, cooked with a little butter, in a 375 degree oven for 10 minutes. So delish! If only all the people who buy sweetened yogurt would try this, they wouldn’t go back!

I didn’t see anything about “Two Good”. Has only 3 grams of carbs. Is there some reason why this one is not listed? I really like it and it’s only 80 calories as well. Haven’t tried it in a smoothie, does it not work well for that?
