- 1 Cup Mayonnaise
- 1 Tablespoon Lemon Juice
- 2 Teaspoons Sugar* use erythritol if low carb
- 3 Cups Chicken cooked + cubed
- 1 Cup Celery diced
- 1 Cup Red Grapes* seedless + halved. To save some carbs, swap these with blackberries!
- 3/4 Cup Walnuts chopped
- 3/4 Cup Coconut shredded + unsweetened. Optional
- In a small bowl, combine the dressing ingredients.
- In a large bowl, combine the salad ingredients.
- Pour the dressing over the salad and toss everything together.
- Place your salad in the fridge for 30 minutes before serving, and enjoy!
