Whip up my classic chicken salad with apples for a quick, flavorful meal!
Salad recipes are a no-brainer when it comes to a low carb lifestyle, but they don’t have to be boring. If you’re searching for healthy recipes, try my delicious chicken salad! I’ve shared many healthy chicken recipes here, but this is one of my favorites…
It’s perfect to make in bulk, whether for meal prep or potlucks. I love that making it means I don’t have to scramble for healthy lunch ideas throughout the week.
I’m positive you’ll love it too, so let’s dive in!
My recipe brings out the best in chicken salad by combining savory with a dose of sweetness! Besides being absolutely delicious, it’s also:
- Quick and easy to make
- Super customizable!
This healthy chicken salad is so effortless, it’s bound to become a go-to recipe for healthy lunch ideas. It’s also really flexible, so you can customize to your individual taste buds!
And here’s an important secret: I recommend letting the chicken salad sit in the fridge for at least 30 minutes after you whip it up. This is to let the flavors truly mix together and make the dish extra tasty!
Chicken – When it comes to cooking the chicken, the method is up to you. You can bake the chicken, boil it, buy it pre-cooked, or even use rotisserie chicken. The texture and flavor will obviously differ depending on which type you use, so pick what you enjoy the best!
Apples – I love adding apples to my salads because they give a dose of sweetness along with a satisfying crunch. Fuji, Gala, and Honeycrisp are all great options, but feel free to use whatever variety you want.
Extras – The recipe also calls for shredded coconut, which isn’t typical for a chicken salad. But I love the texture and subtle, nutty flavor it adds!
Tools To Make
To make chicken salad with apples, you only need a blender and a bowl to mix all the ingredients—super easy!
You can make a batch and use an airtight container to store it in the fridge. If stored properly, chicken salad should be good in the fridge for a few days.
Can You Freeze This?
I wouldn’t recommend freezing chicken salad with apples because it’ll change the beautiful texture of the salad. (The apple and celery will lose their crispness, and the mayonnaise will separate when frozen.)
Meal Prepping Tips
Chicken salad is a great meal prep option! You can easily make it in bulk and store it in the fridge. For extra ease, I like to pack it in individual serving containers. Have several serving options prepared (bread, crackers, lettuce, etc.) if you want to keep things interesting throughout the week!
This chicken salad with apples is delicious as is, or you can try one of these variations:
What Are Some Different Ways To Serve This?
Versatility is one of the best parts of making a chicken salad with apples! You can:
- Make a chicken salad sandwich with low carb bread (bonus: make it a grilled sandwich!)
- Serve over greens
- Put it in a lettuce wrap
- Serve with low carb crackers or veggie sticks
There’s lots of options, so get creative!
One of my favorite lunch meal preps is making a mason jar salad. You can fill half the jar with chicken salad, then pack greens on top for a healthy lunch!
How Can I Make This Without Mayo?
If mayonnaise isn’t your thing, no problem! Switch out mayo and make a greek yogurt chicken salad instead. The tangy, creaminess of the yogurt will add a beautiful touch to the dish.
Just make sure to read the nutrition label when buying greek yogurt and watch out for added sugar!
Can I Add More Greens?
Absolutely! You can serve chicken salad with apples over a bowl of kale or arugula to add some nutritious greens to your meal. But you can also use some herbs to make it even more exciting!
For a burst of fresh basil, make pesto chicken salad by adding pesto to the mix. Feel free to use as much or little as you want, but between 1/2 to 3/4 cup should do the trick!
Tarragon chicken salad is also a great option because the tarragon pairs wonderfully with chicken. Add a tablespoon of fresh tarragon, or a teaspoon if dried, to make your salad more flavorful!
How Can I Make This Healthier?
Avocado lovers rejoice! If you want to make this nutritious recipe even healthier, you can try an avocado chicken salad!
Avocados are a great source of healthy fats, naturally low in carbs, and chock full of important vitamins and minerals. The creamy texture makes it a fantastic substitute for mayo.
What Other Fruit Can I Add?
Adding more fruits will give more sweetness to the salad, but it can also add a lot of carbs. Grapes and cranberries, for example, are two popular ingredients to add.
Chicken salad with grapes will have an added burst of sweetness, and cranberry chicken salad will have a delicious tartness. But they’re both pretty high in carb content. That doesn’t mean you can’t use them at all — consider using smaller portions if that works with your meal plan!
